Did you know that I love to cook?

My husband can't believe how I love to look at cookbooks!

I'm always checking out new recipes and trying them!

 

So, from time to time I'll be sharing some recipes here.

You'll have to let me know if you try them!

And you'll have to share some of your

favorite recipes with me!

 

We've been having "soup weather" here~

we love a bowl of hot flavorful soup for dinner!

Here's one of our faves!

 

Italian Soup

 

16 oz. Italian Sausage (Trader Joes’ Chicken Sicilian, or other flavor)

garlic

4 cups chicken broth

2 cups water

9-12 oz. pkg of tortellini ( I like to buy fresh tortellini from Sam's or Walmart)

1 can garbanzo beans—drained

1 can stewed tomatoes

1/3 cup country Dijon mustard (The kind with the seeds)

½ tsp. dry oregano

¼ tsp. black pepper

1 cup fresh spinach, shredded, stems removed

Fresh grated Parmesan cheese

 

Cook sausage out of skin with garlic. Drain fat. Add chicken broth and water and bring to a boil. Add pasta, cook 4-5 minutes. Stir in remaining ingredients (except spinach and Parmesan). Heat thoroughly. Add spinach and cook 1 minute after it wilts. Dish up and top with parmesan. Serves 4. Enjoy!
